Lentil and Beetroot Salad

You could call it almost healthy fast food. It's also suitable for meal prep.

Ingredients

  • 1 jar of lentils (or lentils left over from cooking)

  • 2 beetroot bulbs (cooked)

  • 1 apple

  • Olive oil (and/or hemp seed oil/ sesame oil/ walnut oil)

  • lemon

  • Salt & Pepper

  • Spices and herbs as desired: e.g. cumin, coriander, parsley...


Preparation

  1. Rinse lentils thoroughly and drain

  2. Cut beetroot and apple into small cubes

  3. Mix both and season with oil, salt and pepper and other spices and herbs to taste
