Lentil and Beetroot Salad

You could call it almost healthy fast food. It's also suitable for meal prep.

Ingredients
1 jar of lentils (or lentils left over from cooking)
2 beetroot bulbs (cooked)
1 apple
Olive oil (and/or hemp seed oil/ sesame oil/ walnut oil)
lemon
Salt & Pepper
Spices and herbs as desired: e.g. cumin, coriander, parsley...
Preparation
Rinse lentils thoroughly and drain
Cut beetroot and apple into small cubes
Mix both and season with oil, salt and pepper and other spices and herbs to taste
