Caesar Pasta Salad

A classic with a twist

Ingredients for 2-3 servings
150 g chickpea pasta (fusilli or penne or...)
200 g cooked chickpeas
1 head of romaine lettuce
2 tbsp vegan Caesar dressing
20g sunflower seeds
For the Caesar dressing:
3 tbsp (vegan mayo)
2 tbsp (vegan) yogurt
2 tsp yeast flakes
2 tsp mustard
1 tbsp olive oil
salt, pepper
Splash of lemon
Preparation
Cook pasta al dente according to package instructions, drain and let cool.
Meanwhile, mix all ingredients for the Caesar dressing in a blender until creamy, season to taste
Wash and cut romaine lettuce
Place salad, chickpeas, pasta and sunflower seeds in a bowl.
Mix with Caesar dressing and season to taste.
