Caesar Pasta Salad

A classic with a twist

Ingredients for 2-3 servings

  • 150 g chickpea pasta (fusilli or penne or...)

  • 200 g cooked chickpeas

  • 1 head of romaine lettuce

  • 2 tbsp vegan Caesar dressing

  • 20g sunflower seeds


For the Caesar dressing:

  • 3 tbsp (vegan mayo)

  • 2 tbsp (vegan) yogurt

  • 2 tsp yeast flakes

  • 2 tsp mustard

  • 1 tbsp olive oil

  • salt, pepper

  • Splash of lemon


Preparation

  1. Cook pasta al dente according to package instructions, drain and let cool.

  2. Meanwhile, mix all ingredients for the Caesar dressing in a blender until creamy, season to taste

  3. Wash and cut romaine lettuce

  4. Place salad, chickpeas, pasta and sunflower seeds in a bowl.

  5. Mix with Caesar dressing and season to taste.
