Coconut Energy Balls

Ingredients

  • 80 g desiccated coconut (plus some extra for rolling)

  • 80 g coconut butter (soft, warm slightly if necessary)

  • 3 soft dates

  • 2 tbsp chia seeds

  • 12-15 almonds

  • 1 tsp vanilla extract (or seeds of a vanilla pod)

  • 1 pinch of salt


Preparation

  1. Mix the dates, coconut butter, desiccated coconut, chia seeds, vanilla and salt in a food processor until smooth.

  2. Form the mixture into small balls with a whole almond in the middle.

  3. Roll the balls in coconut flakes.

  4. Place the finished energy balls in the refrigerator for about 30 minutes to allow them to firm up.


The coconut energy balls will last for about 1 week in the refrigerator, but they can also be frozen.
