One-Pot with Lentils & Mango

Ingredients

  • 100 g yellow or red lentils

  • 1 sweet potato

  • 1 mango

  • 100ml coconut milk

  • 1 onion

  • Ginger

  • lime juice

  • 1 handful of sliced almonds or cashews

  • some coriander


Preparation

  1. Cut sweet potatoes and mango into small cubes

  2. Chop onion and ginger and fry with coconut oil

  3. Add sweet potatoes and deglaze with 600ml vegetable stock

  4. Add the washed lentils and simmer covered for about 15 minutes on medium heat

  5. Meanwhile, roast sliced almonds or cashews

  6. Add mango and coconut milk, heat everything back up and season with lemon juice and salt

  7. Garnish with some coriander and sliced almonds or cashews
