Power Granola

Muesli full of fiber for an energetic start to the day

Ingredients for 8-10 servings

  • 200 g oat flakes

  • 50 g mixed nuts (almonds, hazelnuts, walnuts, roughly chopped, as desired)

  • 30 g sunflower seeds or pumpkin seeds

  • 30 g flaxseed (whole or crushed)

  • 30 g chia seeds

  • 2 tbsp coconut oil

  • 3-4 tbsp maple syrup or honey

  • 1 tsp cinnamon (optional)

  • 1 pinch of salt

  • 30–50 g dried berries or raisins (optional, add after baking)


Preparation

  1. Preheat the oven to 160 °C fan-assisted (180 °C top/bottom heat).

  2. Mix oats, nuts, seeds, flax seeds, chia seeds, cinnamon and salt in a large bowl.

  3. Heat the coconut oil and maple syrup slightly (so they are liquid) and stir well into the mixture until everything is slightly shiny.

  4. Spread the mixture on a baking tray lined with baking paper and press down lightly.

  5. Bake for about 20-25 minutes , turning carefully halfway through to crisp up.

  6. Allow to cool completely (it only gets really crunchy when it cools down!).

  7. Fold in dried berries if desired.


    The granola will keep for 2-3 weeks in an airtight jar or container.
