Sweet Potato Kumpir with beans, corn & guacamole

Ingredients for 2 servings

  • 2 large sweet potatoes

  • 200 g black beans (cooked)

  • 100 g corn (canned or fresh)

  • 1 avocado

  • some lime juice

  • Salt, pepper, chili to taste

  • Fresh herbs (e.g. parsley)

  • Jalapeños (optional)


Preparation

  1. Wash the sweet potatoes with the skin on, pierce all over, and bake at 200°C for 45–60 minutes until tender (bake longer if necessary).

  2. Meanwhile, make the guacamole: mash the avocado and season with lime juice, salt, pepper and chili.

  3. Wash beans and corn

  4. Cut the finished sweet potato kumpir lengthwise and fill it with beans, corn and jalapeños if desired.

  5. Add guacamole and sprinkle with herbs.
