Sweet Potato Kumpir with beans, corn & guacamole

For sweet potato lovers

Ingredients for 2 servings
2 large sweet potatoes
200 g black beans (cooked)
100 g corn (canned or fresh)
1 avocado
some lime juice
Salt, pepper, chili to taste
Fresh herbs (e.g. parsley)
Jalapeños (optional)
Preparation
Wash the sweet potatoes with the skin on, pierce all over, and bake at 200°C for 45–60 minutes until tender (bake longer if necessary).
Meanwhile, make the guacamole: mash the avocado and season with lime juice, salt, pepper and chili.
Wash beans and corn
Cut the finished sweet potato kumpir lengthwise and fill it with beans, corn and jalapeños if desired.
Add guacamole and sprinkle with herbs.
